High-Protein Avocado Toast

Well, at least higher protein…. I mocked avocado toast until I had the version from Blue Bottle Coffee in San Francisco. I think the key was really good Acme bread, to be honest, but they also added some nice, crunchy sprouts and a spritz of lemon juice. Anyway, it got me seeing avocado toast in a different light.

The problem was that I need a fair amount of protein in my life for a number of reasons, and avocado toast—while it has a good amount of fat for staying power—falls down a bit in the protein department. I don’t remember exactly how I settled on the egg/hummus/avocado combo (likely that was just what I had in the frig), but it adds 10g of protein and tastes fantastic—tangy, cool, hot (from the fried egg), crunchy, spicy (if you sprinkle on some shichimi togarashi), creamy. Really hits the spot. (If you add sprouts you’ll get even more protein and some extra vitamins, but I never have sprouts handy.)
